Wine Review: 2010 Paul Dolan Vineyards Mendocino County Cabernet Sauvignon

I have always been a fan of Mendocino wines going back to the early eighties. They were always on the forefront of sustainable organic farming. This wine is a good representation of the terroir and represents the variety well. The clean flavors exhibit the purity of the fruit and hands off approach to winemaking. As usual when drinking a two year old Cabernet Sauvignon the aromas and flavors were still very tight not giving up much even after a couple of hours of breathing time. Exotic sandalwood and anise aromas lead the parade with dark berries trailing slightly. On the palate, the fruit is plum and brown spice. This is a good wine to serve with complex dishes, as the solid but simple flavors of the wine will work nicely in the background.
