In epic proportions, the wow factor comes into play from olfactory senses to palette pleasures; mineral and white peach dance from the glass leading to a lime and green apple sensation that is clean, sophisticated, round and complex with a medium-long finish. Refreshing and elegant, this Chenin blanc will pair exceptionally well with fish, cheese and crustacean dishes. Marc’s crab cake recipe comes to mind. A simple grilled pike (a noteworthy fish in Loire) drizzled with the regions’ most famous culinary creation—a Beurre blanc (sauce made with butter, shallots, and a reduction of dry white wine and vinegar) would knock it out of the park.
