Nothing says I love you like cooking your heart out for someone while sparing no expense for the ingredients so I present to you The One and Only, “I love you Mom” Mother’s Day Brunch. Here is an easy prep, easy execute menu that can be prepped the day before:

American Caviar topped deviled eggs

4 eggs

1 oz American caviar (Sturgeon Roe) available at New Seasons, Uwajiimaya and Whole Foods in the Pacific Northwest


Lemon juice

Fresh Dill or Chives

Dill relish or drained and rinsed chopped capers

To prepare:

deviled eggs caviarHard boil 4 eggs until done then chill, peel shells split lengthwise and place yolks in small mixing bowl.

Add 1 tsp. lemon juice, 3 tbsp. mayo and 1 tsp. of chopped capers or 1 tsp. dill relish. Add salt and pepper to taste. Mix together with egg yolks.

Place mixture back in egg white halves using a small spoon or spatula. For the serious culinary presentation use a piping bag to pipe egg yolk mixture into shells.

Top with the fish roe. Refrigerate until ready to serve.


Tomato and Asparagus Tart

1 Sheet frozen puff pastry

1/2 pound asparagus

2 medium tomatoes

½ cup grated swiss cheese

1 small log goat cheese

3 egg yolks

1 shallot

Olive oil for tossing vegetable before baking

AP flour for dusting pastry

Salt and pepper


Heat oven to 400 F

Roll out 1 sheet puff pastry. Dust with flour and prick with a fork. Place on baking sheet and blind bake, for 12 minutes then cool

Blanch 1/2 lb. asparagus, cut to fit pastry.

Thinly slice 2 medium tomatoes in half moon shapes and season with salt and pepper.

Mix 6 oz. of grated Swiss cheese and 4oz of goat cheese with 3 large egg yolks then spread evenly on pastry. Leave a 1 inch border around the sheet of pastry. Toss tomatoes and asparagus in olive oil and shingle tomatoes and asparagus evenly on pastry. Cook for 20 minutes.

Serve with Charles Heidsieck Champagne. I suggest the Brut or the Millesime 2005.
